On November 29, 2025, we were able to carry out our annual ice wine harvest under ideal conditions. With temperatures around -8°C, the grapes were harvested in the early morning hours, around 3 a.m. The harvest took place in our vineyards between Rohrendorf and Gobelsburg – an area known for its particularly cold nights, creating the perfect conditions for an ice wine harvest year after year. Crucially, the grapes had to be completely frozen, as this is the only way to produce ice wine.

With this harvest date, we surpassed the 2023 ice wine harvest by several days, achieving the earliest ice wine harvest in the history of our winery. An early ice wine harvest is particularly valuable from a quality perspective, as the grapes better retain their natural freshness, vibrant acidity, and clear aromatics. This year, we were once again able to harvest a very good quantity with consistently impressive quality – a result that is anything but a given for ice wine.

A special aspect of this night was the harvest under a full moon, which created a unique atmosphere and further shaped the moment. After pressing, in which the frozen water remains in the berries and only highly concentrated must is obtained, the ice wine now matures peacefully in the cellar.

Ice wine is one of the most elaborate and fascinating wine styles. It combines intense fruit, delicate sweetness, and precise acidity. We are very pleased to have completed this year's ice wine harvest so early and successfully, and we are already looking forward to the new vintage, which is currently maturing in the cellar.
